Reorganize rates at checkout or preselect a rate
By default, Shopify organizes shipping rates from the cheapest to the most expensive. The checkout will always pre-select the first rate (which is the cheapest rate, in alphabetical order).
Postcode Shipping can’t make changes to which shipping rate is pre-selected or how rates are organized. It's Shopify who controls the checkout page and doesn't allow third-party apps to make that type of modification.
